The start of summer is just around the corner, but late spring veggies are still in season. What better way to enjoy them than on top of seedy crackers?
One of our favorite veggies this time of year is asparagus. Try smoked salmon and asparagus on top of seedy crackers, or lightly sauté asparagus spears in olive oil and toss them with crumbled crackers.
Sugar snap peas are in season! Technically a legume and not a vegetable, they’re great raw or cooked. Spread some goat cheese on a cracker and top it with a sugar snap pea for a quick snack. For a dairy substitute, try this almond cream recipe.
Cucumbers are in season, too, and also have a low GI value. Cucumber yogurt dipping sauces are perfect for summer. Here’s a version substituting yogurt with coconut cream or there’s a more traditional version here.
Once you’ve finished all the crackers in the package, don’t throw out the extra seeds! They make a great steak rub or salad topper.
Some other seasonal produce to look for at your local farmers market are strawberries, raspberries, cherries, radishes, carrots, beets and celery. Early potatoes, hothouse tomatoes, and certain fresh herbs are available now as well.
